About this work

Description

False-coloured scanning electron micrograph of crystallised ginger candy (ginger and cane sugar). Crystallised ginger no longer conforms to the natural, hollow honeycomb pattern found in raw ginger. It has been transformed into the irregular swollen forms seen here. Width of image is 370 micrometres. These drawings form part of a series of work "Raw to Processed" which considers food and its relationship to health, looking at patterns in the structure of food and how these change when food is processed.
