But everything comes from the best London authorities, each of whom I consulted, and most amusing it was to examine them.”* “ If you have been wise or wicked enough to keep a journal of the social conditions of your day,” one of his correspondents wrote to him, “ I doubt whether any one now alive could present the aspects of English life with such power as yourself.”^ The truth of this, one aspect of it, is fully borne out by the following essay—the work of a man whom the late Lord Houghton “ placed at the head of our present English essayists,” and Lord Lytton spoke of as “one of the most elegant critics our century has produced.” 3 Hayward, in his Art of Dinmg, can hardly stand in need of an apologist. Had he wanted the authority of famous names, he might have invoked Evelyn for his Aceiaria (1699), and Johnson through the pages of Boswell; who have shown with what care the elementary functions of life may be advantageously elucidated.'* It is hoped that the inclusion of a small amount of additional matter may increase the value of this volume. The College Graces here given must interest more than one class of reader. The additional Menus, taken at haphazard, may serve to bring that part of the literature up to date ; and it now only remains to the present editor to tender his thanks to the several willing contributors, through whose kindness and courtesy these additions and notes have alone been rendered possible.
