Ultra-thin virtual slices through the fruit or vegetable were acquired by spin-echo magnetic resonance imaging (MRI) which reveals details inside the object without damaging it. The images are digitally coloured where contrast corresponds to MRI signal intensity and hue was changed to match the natural colour of the fruit or vegetable.

This image of a strawberry was created by combining multiple scanning electron micrograph (SEM) images, which were then coloured and shaded to produce this incredibly detailed 3D image. The texture of the leaves and gemminating seeds are clearly visible. This is very difficult image to achieve due to the high water content of the subject matter, which is not normally compatible with the SEM technique.

A series of sequential ultra-thin slices through the entire fruit were taken and selected slices from that series are shown here. Photomacrograph of grey mould (Botrytis cinerea) on a strawberry. Moulds are fungi that live on plant and animal matter and need moisture to thrive and grow. This particular fungus is very common and is often found on plants grown in humid conditions such as in glass houses where it produces grey fuzzy mould. It is a common disease of soft fruit such as strawberries, grapes and gooseberries. Under drier conditions, Botrytis cinerea can also cause noble rot, which is used in the wine industry to produce some sweet dessert wines. Width of image is 1 cm.
